Ingredients and measurements needed: 1/2 cup peanut butter, 2 tbsp coconut oil, 1 1/2 tbsp sweetener (I always recommend xylitol for its extensive anti-inflammatory and digestive function health benefits), 3 oz chocolate, 2 tbsp of coconut oil, additional peanut butter, or chocolate chips
Instructions: Gently heat the peanut butter and coconut oil so that they can easily be mixed. Stir peanut butter, coconut oil, and sweetener together. Pour into a mini muffin tray, ice cube tray, or something similar. Stir together the remaining ingredients, chocolate and additional peanut butter or oil, and layer on top. To finish, freeze to set. When you’re done, they should look like this.
- Peanut Butter Cheesecake Fat Bombs
This is another version of peanut butter cups, but with a twist, cheesecake.
Prep time is 30 minutes, while the total time is 3 hours.
Ingredients and measurements needed: 8 oz cream cheese, 1/3 cup peanut butter, 4 tbsp sweetener, optional 1/2 cup chocolate
Instructions: The fat bombs will be baked using a cookie sheet with parchment paper. Combine cream cheese, peanut butter, and sweetener in a bowl until creamy and smooth. Scoop this batter into balls and place it on a cookie sheet. Put the cookie sheet in the freezer and cool for 30 minutes. As an option, you can dip the balls into melted chocolate. At this point, freeze for 2 hours.
After following the recipe, you will have peanut butter, cheesecake, bite-sized candy.
- Chocolate Chip Banana Zucchini Bread
Perfect as a dessert, breakfast, or snack, this banana bread recipe will have you coming back to it time and time again.
Prep time is 10 minutes, while the total time is roughly 50 minutes.
Ingredients and measurements needed: 1 1/2 c gluten-free oats, 1 tsp cinnamon, 1 1/4 tsp gluten-free baking powder, 1/2 tsp baking soda, 1/4 tsp salt, 3 tbsp nutty cashew butter or peanut butter, 1/2 cup unsweetened coconut yogurt, 1/4 cup sticky sweetener, 1 cup banana, 1 cup shredded zucchini, 1/3 cup chocolate chips, 1 egg
Instructions: Preheat the oven to 350 degrees, and prepare a bread pan with parchment paper or non-stick spray. Mix dry ingredients. Add egg, sticky sweetener, and yogurt until well combined. Fold in bananas, zucchini, and chocolate chips. Pour into your bread pan and bake for 40 minutes.
